Dry Fruit Cake in Pressure Cooker
Ingredients
  • 1 Cup All-purpose flour
  • 3/4 Cup Sugar
  • 3 Eggs
  • 1/2 Cup Oil
  • 1/2 Cup Milk
  • 1/2 Teaspoon Vanilla essence
  • 1 Teaspoon Baking powder
  • 1/2 Teaspoon Sodium bicarbonate
  • 1/4 Teaspoon Salt
  • Dry Fruits

Let's see how to bake cupcakes without oven or microwave in a pressure cooker. Powder the sugar. To bake cake, we need to preheat the cooker. Heat cooker as we prepare batter. Spread 1 cup salt on the base of the cooker. Sand instead of salt could be used. Preheat cooker on medium flame for 10-15 minutes. Prepare batter in the mean time. To a bowl, add 1 cup all purpose flour, 1 teaspoon baking powder, 1/2 teaspoon sodium bicarbonate and mix. Add dry fruits like raisins, chopped cashews, pista, chopped almond and mix. Mixing the dry fruits with flour instead of the prepared batter will prevent the dry fruits from sinking to the bottom. In a different bowl beat 3 eggs. Beat eggs till they form foam. Add æ cup powdered sugar. Normal sugar instead of powdered sugar also could be used, but powdered sugar will melt faster. Add a pinch of salt and mix. Add 1/2 cup oil and mix. Any vegetable oil could be used. The cake will become smoother if the wet ingredients are mixed well. Add 1/2 teaspoon vanilla essence and mix. Add dry ingredients slowly to the wet mixture and keep mixing. Donít mix too much after adding the flour mixture. After batter thickens, add milk. Add milk till required consistency is obtained. These cakes could be made with cake moulds or even normal bowls made of steel or aluminium. Apply oil to the bowl. Spread oil evenly on the inside so that cake doesnít stick. Also add some all-purpose flour and do as shown so it spreads evenly. Remove excess flour. Pour prepared batter in the bowl. Shaking the bowl will remove the air bubbles from the batter. Garnish with toppings of your choice. Fill up to only half of the bowl so that the cake doesnít overflow while cooking. On the pre heated salt, put a plate. Place bowl filled with cake batter on the plate. Put the lid on the cooker without weight after removing the gasket. Bake on high flame for 3 minutes. Bake on medium flame for 15-20 minutes. After 20 minutes, check if the cake has been baked fully. Poke the cake with a toothpick, if the toothpick comes out clean, then the cake has been baked completely. Remove the bowls and let it cool down for 10-15 minutes. Separate the cake from the bowl with the help of a knife. Flip the bowl and move the cake into a plate. Flip it again with the help of another plate. Garnish with desired toppings.
