  • 1 Teaspoon Salt

Making dosa batter is a time taking process. Soaking dal and rice, grinding them and fermenting them takes a lot of time. Let's see how to make instant dosa mix. Heat a pan. Fry 1 cup black gram. If you want to clean the black gram, then wash and dry in shade for 2 hours. It is not necessary to fry sun dried black gram. Add 1/4 cup bengal gram. Add 1/4 teaspoon fenugreek seeds. Fry for 4-5 minutes on low medium flame. Let it cool down and powder it. Fry flour in the mean time. For 1 cup black gram, fry 3 cups rice flour. Idli rava instead of rice flour could be used. Using rice flour will make the dosa soft where as using idli rava will make the dosas crispy. Here I took 1 1/2 cup rice flour and 1 1/2 cup idli rava. Fry for 2-3 minutes till the flour becomes hot. Let it cool down. Powder dal in the mean time. Powder dal in a mixie jar. Strain the powdered dal through a strainer to remove dal particles. Move this powder into a bowl. Add fried rice flour and idli rava. Add 1 teaspoon salt or salt to taste and mix. Store it in an air tight container. This could be used for up to 2-3 months and could be used for up to 6 months if put in fridge. Let's see how to make dosa. To a mixing bowl add 1 cup instant dosa mix. Add 1/2 cup curd. Any curd could be used here. Mix into a batter by adding water slowly. Mix till dosa batter consistency is obtained. For instant dosa, mix curd or the powder could be soaked in water for 4-5 hours. Mix the batter and let sit for 10 minutes. Add a pinch of baking soda and mix. Baking soda will make the dosa puffy. Baking soda is optional. Heat a pan. Put the stove on low flame before pouring the batter. Don't the pour the batter on the pan if it is too hot. To cool it down, put it away from the flame for 2 seconds and make the dosas. Pour the batter with a spoon and spread it with a spoon. Add 1 teaspoon oil. Flip after one side is cooked. Any type of dosa could be made with this instant dosa mix.
