Recipe Notes

PREPARATION OF ARATIKAYA BAJJI

Lets see how to make bajji with unripe banana
Firstly, we need to peel the bananas and dice them diagonally
Add 1/2 teaspoon salt to water and put the bana pieces in it
This will prevent the bananas from turning black
To a mixing bowl, add 1 cup bengal gram flour.
Then add 1/2 teaspoon salt, 1/4 teaspoon ajowan, a pinch of soda and mix
Add water and mix it into a batter
We can see that the batter is sticking to the banana piece when it is dipped. This is the consistency we want
Heat oil for deep fry
Drop a little batter in it to test the heat
We can see that the batter is floating, this means that the batter is hot enough
Dip the banana pieces in the batter and drop them in oil
We haven't added and masalas in the batter. It will still be very tasty
Fry on medium flame only
Flip and fry the banana bajji till they turn golden brown
Move them into a plate Serve hot with green chilli chutney!
