Bachali Kura Pachadi or Malabar Spinach Chutney is a healthy alternative for our regular chutneys. It is a very tasty chutney when paired up with dosa or idly or even rice!
- 1 cup Malabar Spinach
- 7-8 Green Chillies
- 1 tsp Cumin Seeds
- 1 tbsp Bengal Gram
- 2 tbsp Black Gram
- 2 tbsp Coriander Seeds
- 7-8 Garlic Cloves
- 10-15 grams Tamarind
- 1 tsp Salt
- Tempering Seeds (of your choice)
Heat 1 teaspoon oil in pan
Add 1 tablespoon bengal gram, 2 tablespoons black gram and fry
Fry till they change colour and add 2 tablespoons coriander seeds and fry
Add chopped green chillies and fry
Add 1 teaspoon cumin seeds, 7-8 garlic cloves and mix
Cut off the stove and let it cool down
In the same pan heat 1 teaspoon oil
Add washed and diced malabar spinach and fry
Fry till it changes colour
Cut off the stove and let it cool down
Add previously fried ingredients to a mixie jar
Add 1 teaspoon salt or salt to taste, washed and soaked tamarind
Grind it into a soft paste
Add fried malabar spinach and grind it into a smooth paste
Let's prepare tempering now
Heat 2 teaspoons oil in pan
Add 1 teaspoon mustard seeds, 1/2 teaspoon cumin seeds, pieces of 2 green chillies
As dried chillies start to change colour, add curry leaves
Add 1/2 teaspoon turmeric powder and mix
To this tempering add previously prepared chutney and mix
Serve with rice, dosa or idly!
