Spiny Gourd Fry | Boda Kakarakaya Fry

INGREDIENTS
Spine Gourds – 1/2 kg
Cumin Seeds – 1 teaspoon
Onions – 1
Curry Leaves – 1/2 cup
Green Chillies – 2
Turmeric Powder – 1/2 teaspoon
Ginger Garlic Paste – 1 teaspoon
Chilli Powder – 2 teaspoons
Salt – 1 1/2 teaspoon
Coriander Seeds Powder – 1 1/2 teaspoon
Sesame Seeds Powder – 1 teaspoon
Coconut Powder – 1 1/2 teaspoon

This is Boda Kakarakaya in Telangana and Spiny Gourd in English
Spine gourd is very nutritious and we get them in rainy season only
There are a lot of fibers in this vegetable along with vitamin A and vitamin E
Spine gourd will also improve immunity
It can be cooked any way we want.
Here I will show you how to make spine gourd fry
I used 1/2 kg spine gourds here
To a bowl of water, add spine gourds
Remove the stems and boil for 8-10 minutes
Poke the vegetables with a fork to check if they are cooked completely
They can be crushed easily with hands if they are cooked
The seeds in it also could be used for the fry
But, if the seeds in the vegetable are red, then remove them since it means the spine gourd is ripe
Heat 1 1/2 tablespoon oil in pan
Add 1 teaspoon cumin seed and fry
then Add 1 chopped onion and fry
Close lid and cook till they become transparent
Then add 2 green chillies and fry
Also add 1/2 cup curry leaves, 1/2 teaspoon turmeric powder, 1 teaspoon ginger garlic paste and mix
then Add the spine gourd pieces and close lid for a couple of minutes
This doesn’t need to be cooked for long time since the spine gourds are already boiled
Now add 2 teaspoons chilli powder, 1 1/2 teaspoon salt, 1 teaspoon coriander seeds powder, 1 1/2 teaspoon sesame seeds powder, 1 1/2 teaspoon coconut powder and mix
Then add 1 teaspoon jaggery powder
Sugar can also could be used instead of jaggery powder
Cook for 6-7 minutes on low flame
Then Sprinkle coriander leaves and cut off the stove
Serve hot!
