The easy dinner recipe that every home cook should have! This Crispy Roast Chicken with Vegetables looks impressive, tastes amazing, and is easy to make.
- 1 kg Chicken
- 1/2 cup Onions
- 10-12 Dried Chillies
- 2 tbsp Coriander Seeds
- 10-12 Garlic Cloves
- 1 tsp Cumin Seeds
- 1 tsp Turmeric Powder
- 2 tsp Salt
- 1/2 tsp Shahjeera
- 6 Cloves
- 3 Cinnamon Sticks
- 4 Cardamom
- 1/2 tsp Pepper
Heat 2 tablespoons clarified butter (ghee) in a pan
Oil or butter also could be used
Add chopped onions and fry
Fry till they change colour
Add 1 teaspoon turmeric powder and mix
Add chicken pieces and mix
Close lid and cook on medium flame
Let's prepare masala in the mean time
Heat pan and fry 2 tablespoons coriander seeds
As they change colour, add 1 teaspoon cumin seeds and fry
Add dried chillies and fry till they change colour
Add whole garam masala - cardamom, cloves, shahjeera, cinnamon sticks, pepper
Fry
Cut off the stove and let it cool down
In the mean time, stir the chicken and cook till the water seeping out of the
chicken boils away
Powder the previously fried ingredients along with garlic cloves
Chicken is almost cooked now
Add the prepared masala, salt and mix
Stir and close the lid
Cook on low flame
Here I'm adding a little bit of food colouring
This step is optional
Cook on low flame for 10 more minutes
Sprinkle coriander leaves, curry leaves and cook for 5 more minutes
Serve with rice or roti
