- 1 cup Black Gram
- 2 cups Rice
- 1/4 cup Bengal Gram
- 1/2 tsp Fenugreek Seeds
- 1/4 cup Flattened Rice
Let's see some tips and tricks to make hotel style dosa
Wash and soak 2 cups of rice.
Add 1/2 teaspoon fenugreek seeds.
For 2 cups rice- take 1 cup black gram
If you are using a grinder, 2 1/2 cups rice also could be used
To 1 cup black gram, add 1/4 cup bengal gram and wash 2-3 times
Add water and soak for 4-5 hours
Soaking the flattened rice for 10-15 minutes would be enough
Let's grind them now
To grinder, add a little water, soaked grams and grind
Mixie also could be used
Add rice only after the grams turn into a soft paste
Add flattened rice after adding rice
Cooked rice instead of flattened rice could be used
This batter could be used for upto 1 week if stored in fridge
Move the batter into a bowl
Leave some space for the batter to grow
Mix with hand once and let it ferment for 5-6 hours
Secure lid and store for fermentation for 5-6 hours
Open lid and mix again
Add salt only to the amount of batter being used or else the batter will spoil soon
Store the rest of the batter in an air tight container
To a bowl add required amount of batter, water if require, a pinch of salt
½ teaspoon sugar and mix
Heat a pan and pour dosa batter
Spread the dosa on pan
Add 1/2 teaspoon oil on the top and flip
Serve the Dosa with favorite chutney!
