Egg Semiya Upma, enjoy cooking this tasty breakfast. Vermicelli Upma in Telugu by Hyderabadi Ruchulu
- 2 Cups Vermicelli
- 3 no Eggs
- 1/2 1/2 Onions
- 1/2 Cup Curry Leaves
- 5 No Green Chillies
- 1/2 Cup Coriander Leaves
- 1/2 Teaspoon Cumin Seeds
- 1/2 Teaspoon Mustard Seeds
- 1/4 Teaspoon Garam Masala
- 1/2 Teaspoon Ginger Garlic Paste
- 1 Teaspoon Salt
Heat 5-6 cups water in a pan. Add 1 teaspoon oil. This will prevent the vermicelli from sticking to each other. Let water boil. Add 2 cups vermicelli to boiling water. Boil for 5 to 10 minutes. Boil till they become soft and squishy. Move the boiled vermicelli into a strainer and immediately pour cool water over it. This will prevent the vermicelli from sticking to each other. Heat 2 tablespoons oil in a pan. Add 1/2 teaspoon mustard seeds, 1/2 teaspoon cumin seeds, 1/2 cup diced onions and fry. Fry for a couple of minutes and add chopped green chillies. Close the lid so that onions fry faster. Add 1/2 cup curry leaves, 1 teaspoon salt or salt to taste and mix. Add 1/2 teaspoon ginger garlic paste and mix. Fry for a minute. Break and add 3 eggs. More eggs also could be added if desired. Mix, close the lid and cook on low flame or else the eggs will burn. Cook till the eggs cook completely. Add 1/4 teaspoon garam masala and mix. Add 1/2 cup coriander leaves and mix. Add boiled vermicelli and mix. Cut off the stove after 2 minutes.
