I shared tips for making the perfect classic Indian style tomato and egg curry.
- 1/4 Kg Tomatoes
- Spring Onions and White Onions
- 4 Eggs
- 2 Teaspoons Chilli Powder
- 1/2 Teaspoon Salt
- 1 Teaspoon Coriander Seeds Powder
- 1 1/2 Teaspoon Sesame Seeds Powder (Optional)
- 1/4 Teaspoon Cumin - Fenugreek Seeds Powder
- 1 Ginger Garlic Paste
- 1/2 Turmeric Powder
- 2 Green Chillies
Let's see how to prepare curry
Heat 1 tablespoon oil in pan
Add the white onions
Any type of onions could be used here
Fry these onions and add green chillies
Add 1/2 teaspoon turmeric powder,
1 teaspoon ginger garlic paste and fry for a minute
Add tomatoes and mix
Cook till tomatoes become soft
Add spring onions and cook for 5 minutes
Add 2 teaspoons chilli powder, 1 1/2 teaspoon salt or salt to taste, 1 teaspoon coriander seeds powder, 1/2 teaspoon cumin fenugreek seeds powder, 1 1/2 teaspoon sesame seeds powder and mix
Add a little water
Cook for 3-4 minutes
Move the curry and make a depression and break an egg on it
Similarly make room for as many eggs as desired and break the eggs
Close lid and cook on low flame for 5-6 minutes
Move the eggs slightly so that the bottom doesn't burn off
If there is any water left on the pan, cook till it boils away
Sprinkle some garam masala if desired
Sprinkle coriander leaves and serve hot!
