Everybody likes Dosa with Chutney, here is the simple and easy step by step procedure  to make an Instant Combo Breakfast Pre Mix.

Its not possible to have Dosa along with Chutney when ever desired as its involved pre planning (Soaking Etc), For the easiness of Working Class Women and Bachelors who self cook, we have provided the Instant Combo Breakfast Pre Mix

Instant Dosa Mix

 

I) Ingredients For Instant Dosa Mix

 

Black Gram – 1 Cup

Bengal Gram – 1/4 Cup

Fenugreek Seeds – 1/4 Teaspoon

Rice Flour/ Idli Rava – 3 Cups

Salt – 1 Teaspoon

Curd – 1/2 Cup

a) Lets make the instant dosa mix recipe now

 

Making dosa batter is a time taking process.

Soaking dal and rice, grinding them and fermenting them takes a lot of time.

Let’s see how to make instant dosa mix.

Heat a pan. Fry 1 cup black gram

If you want to clean the black gram, then wash and dry in shade for 2 hours.

It is not necessary to fry sun dried black gram. Add 1/4 cup bengal gram.

Then Add 1/4 teaspoon fenugreek seeds. Fry for 4-5 minutes on low medium flame.

Let it cool down and powder it. Fry flour in the mean time.

For 1 cup black gram, fry 3 cups rice flour.

Idli rava instead of rice flour could be used.

Using rice flour will make the dosa soft where as using idli rava will make the dosas crispy.

Here I took 1 1/2 cup rice flour and 1 1/2 cup idli rava.

Fry for 2-3 minutes till the flour becomes hot.

Let it cool down. Powder dal in the mean time.

Powder dal in a mixie jar.

Strain the powdered dal through a strainer to remove dal particles.

Move this powder into a bowl. Add fried rice flour and idli rava.

Then Add 1 teaspoon salt or salt to taste and mix.

Store it in an air tight container.could be used for up to 2-3 months and could be used for up to 6 months if put in fridge.

b) Let’s see how to make dosa.

To a mixing bowl add 1 cup instant dosa mix.

Then Add 1/2 cup curd any curd could be used here.Mix into a batter by adding water slowly.

Mix till dosa batter consistency is obtained.

For instant dosa, mix curd or the powder could be soaked in water for 4-5 hours.

Mix the batter and let it soak for 10 minutes.

Then Add a pinch of baking soda and mix.

Baking soda will make the dosa puffy.

Baking soda is optional.

Then Heat a pan.

Put the stove on low flame before pouring the batter.

Don’t the pour the batter on the pan if it is too hot.

To cool it down, put it away from the flame for 2 seconds and make the dosas.

The batter with a spoon and spread it with a spoon.

Then Add 1 teaspoon oil.

Flip after one side is cooked.

Any type of dosa could be made with this instant dosa mix.

Instant Chutney Mix

 

II) Ingredients For Instant Chutney Mix

 

INGREDIENTS

1. Groundnuts – 1 Cup

2. Dried Chillies – 7-8

3. Curry Leaves – 1/2 Cup

4. Garlic Cloves – 7-8

5. Cumin Seeds – 1 Teaspoon

6. Tamarind – 20 Grams

7. Salt – 1 1/2 Teaspoon

 

a) Lets make the instant Palli Chutmey Mix recipe now

 

This pre mix chutney will taste good with dosa, idly, etc.

The curry leaves are washed and dried.

Then Heat pan and fry groundnuts.

Fry till it gives out a nice aroma.

This chutney could be used for up to 1 month.

After the groundnuts change colour, move them into a plate and let them cool down.

In the same pan, fry dried chillies.

As they start to change colour, add curry leaves and fry.

Then The curry leaves are washed and dried.

This step is optional.

Fry till the curry leaves become crispy.

cumin seeds and fry for a couple of minutes.

Then Add tamarind and cut off the stove. Let this mixture cool down.

Subsequently Peel of the groundnuts could be removed or powdered as it is.

To a mixie jar, add groundnuts, prepared mixture, 7-8 garlic cloves, 1 1/2 teaspoon salt or salt to taste and powder it.

Then Store it in an air-tight container in the fridge.

Tempering could be added to it or used as it is.

Then Heat 2 teaspoons oil in a pan.

Then Add 1/2 teaspoon mustard seeds, 1/2 teaspoon cumin seeds, 1 teaspoon black gram, 1 teaspoon bengal gram and fry.

As grams start to change colour, add pieces of dried chillies.

Then Add curry leaves, 1/2 teaspoon turmeric powder and mix.

Then Add this tempering to prepared powder and mix.

This pre mix chutney will taste good with dosa, idly, etc. Store it in an air-tight container in the fridge.

This chutney could be used for up to 1 month.

In a bowl of pre-mix chutney, add water till required consistency is obtained.

Curd also could be used.
