INGREDIENTS
1. Bitter Gourd - 1/4 Kg
2. Chilli Powder - 3 Teaspoons
3. Salt - 3 Teaspoons
4. Garlic Stem - 2
5. Coriander Seeds Powder - 1 Teaspoon
6. Cumin Seeds Powder - 1/2 Teaspoon
Bitter Gourd Chilli Garlic or Kakarakaya Karam is spiced with all possible tastes from bitterness, tanginess to spiciness making it enticing & addictive.
Clean the bitter gourds. It is not necessary to peel the skin. Cut them in half (not necessary for small ones). Cut off the edges and put cuts in the middle vertically. Rub a pinch of salt in the cuts. This will remove the bitterness. Heat 3-4 tablespoons oil in a pan. Fry prepared bitter gourds. Mix, close the lid and cook on low flame. Prepare masala in the mean time. To a mixie jar, add 3 teaspoons chilli powder, 2 1/2 teaspoons salt or salt to taste, peeled garlic stems, 1/2 teaspoon cumin seeds powder, 1 teaspoon coriander seeds powder and powder it. Don't add water. Fry bitter gourds till they turn brown. After bitter gourds turn brown, remove excess oil and add prepared masala powder. Cook for 10-15 minutes on low flame. Mix. Stuff the masala into the bitter gourd pieces.
