Madatha Kaja Preparation in Telugu at Home
- 1/2 Kgs All purpose flour
- 50 Gms Clarified butter (ghee)
- 1/2 tbsp Baking soda
- 1 Kg Sugar
- 1 pinch Alum
Homemade Kaja Preparation in Telugu
Today, lets see how to easily juicy kaja at home
Firstly, add 1/2 kg all purpose flour to a mixing bowl
Add 50 grams clarified butter (ghee). Oil also could be used instead
Mix and add 1/2 teaspoon baking soda
Pour a little water in the soda and knead the flour into a dough
Let it sit for 30 minutes
Let's prepare the sugar syrup now
To 1 kg sugar, add 1 glass of water. Add water till the sugar is completely wet
Stir and boil this sugar mixture till the sugar melts completely
Now, add a pinch of alum (patika)
Adding alum to the sugar syrup will keep the kaja from drying off quickly
Boil the sugar syrup a till little bit more that half thread consistency is obtained
Cut off the stove and let the syrup cool down
Knead the dough again
Roll the dough into a thin sheet
Roll as thin as possible
Sprinkle some loose flour on top and fold it in half
Tap on the edges and roll it from one side
If one side seems too thin, cut off a piece from the other side and put it
This will ensure that all the kaja will be the same size
Spread water on the end and stick the dough
Lightly press the dough and elongate it a little bit
Now, cut the dough into 1/2" pieces
Press the dough with your thumb lightly and roll it a little
Lets deep fry them now
Heat oil for deep fry
Do not heat the oil too much
Don't fry on high flame
Fry on low-medium flame
Flip and fry till the kaja turns golden brown
Add this kaja to the prepared syrup directly
Mix the kaja and let it sit for 10 minutes
Move the kaja into a different plate
If there is any sugar syrup leftover, we caan use it when we prepare kaja next time
Tasty and juicy kaja is ready to serve!
Kaja wwill stay fresh from upto 1 weel to 10 days!
