MENTHULA KURA
Today, lets see how to make curry with fenugreek seeds
Wash the seeds a couple of times and soak them over night
We can see that the seeds are bulged up here
Now drain off the water
This water can be consumed as it is or else it can be used in the curry also
Usually, fenugreek seeds are a bit bitter, so the water, as is, also might taste a bit bitter
Finely chop the garlic
Heat 1 1/2 tablespoon oil in pan
Add 1/2 teaspoon cumin seeds, 1/2 teaspoon mustard seeds and fry for a minute
Then add 2 diced green chillies, curry leaves and fry
Now add soaked fenugreek seeds and fry for a minute
Then add chopped garlic cloves and fry
Fry on low flame for 10 minutes atleast
Add 1 teaspoon salt, 1/4 teaspoon turmeric powder and mix
Add a little water.
Here I used the water that the fenugreek seeds were soaked in. Regular water also could be used
Add around 2 glasses of water and let it boil
Cook till all the water boils away
Now, add 1/2 teaspoon chilli powder, 1/2 teaspoon coriander seeds powder and fry on low flame
Stir and cook till oil starts to float
We can see that the curry has become competely dry
Sprinkle some coriander leaves if desired
Fenugreek seeds curry is ready to serve!
This curry could be used for 5-7 days
It will be tasty with rice or roti
