INGREDIENTS
1. Rice Flour - 1 1/2 Cup
2. Grated Raw Coconut - 1 Cup
3. Grated Jaggery - 1/2 Cup
4. Clarified Butter (Ghee) - 2 Tablespoons
5. Dry Fruits - Cashew Nuts, Raisins
6. Salt - 1/2 Teaspoon
7. Cardamom-Sugar Powder - 1 Teaspoon
Heat 1 1/2 cup water in a pan. Add 1/2 teaspoon salt, 1 tablespoon clarified butter(ghee) and let the water boil. When water starts boiling, put the stove on low flame and add 1 1/2 cup rice flour. Mix. Close the lid and turn off the flame. Let it sit for 5 minutes. Prepare filling in the mean time. Heat a pan and add 1 tablespoon clarified butter(ghee). Add 1 cup grated raw coconut, 1/2 cup grated jaggery and mix till the jaggery melts. It will take 3-4 minutes. Add dry fruits. Here I added chopped cashew nuts and raisins. Mix. Powder 4-5 cardamoms in 1 teaspoon sugar and add this to the filling mixture. Mix and move this mixture into a plate. Take the previously prepared rice dough and mix it. Before it completely cools down, mix it into a soft dough. Spread oil or ghee on your hands, make small balls out of the dough and press them. Put a lid on the rest of the dough. Stuff it with jaggery-coconut mixture and make pleats. Press the pleats together while covering the filling completely. Put it in a plate. Steam the modaks. In a bowl or cooker boil 2 glasses water. To a plate or bowl with holes in them, spread ghee. Place this over boiling water. Put modaks on the plate and steam it for 10-12 minutes. Cook on medium flame.
