Recipe Notes

To make this fry, we need to boil mutton first

Boiling it in the pressure cooker will be faster

Add cleaned chicken to the pressure cooker

Add 1/2 teaspoon salt, 1/2 teaspoon turmeric powder,

1/2 teaspoon ginger garlic paste, a part of the garam masala,

some of the diced onions

The mutton will already have water in it,

but if you are doubtful, add 2-3 tablespoons water

Mix and close lid

Cook for 3-4 whistles

Let's prepare masala in the mean time

Heat pan

Fry 1 1/2 tablespoons coriander seeds, 1 teaspoon cumin seeds,

10-12 dried chillies and fry till they change colour

Add khas khas and fry for some time

Add the remaining whole garam masala and mix

Add coconut pieces and cut off the stove

Let the masala cool down

Add this masala to a mixie jar along with garlic cloves and powder it

Don't add water

Open te cooker lid after it cools down

We can see that the water has seeped out of the mutton

Heat 2 tablespoons clarified butter (ghee) in pan
Oil also could be used

Non-veg tastes better when we use clarified butter

Add remaining onions and fry till they turn brown

Add 1/2 teaspoon turmeric powder and mix

Add the boiled mutton along with the water

Cook on high flame if the water seems too much

Close lid and cook till the water boils away

Add prepared masala as much as desired and mix

The rest of the powder could be stored in an air tight container
Add salt and mix

Cook on low flame for 10 minutes

If gravy is desired in the curry, cut off the stove early itself

Add coriander leaves and mix

Serve hot with rice or roti
