In this recipe, we make koftas with spinach and make Palak Kofta Curry with it
- 1 cup spinach
- 2 potatoes
- 2 tomatoes
- 5 cashewnuts
- 1 onion
- 4 green chillies
- 1/2 teaspoon cumin seeds
- 1 1/2 teaspoon ginger garlic paste
- 1 teaspoon turmeric powder
- 1 1/2 teaspoon salt
- 1 teaspoon chilli powder
- 1 teaspoon coriander seeds powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon cumin seeds powder
- 1/2 cup coriander leaves
- 2 teaspoon bengal gram flour

Here I boiled and mashed 2 potatoes
Grind the tomatoes into a paste
Grind the cashewnuts into a paste
Let's prepare koftas first
Heat 1 teaspoon oil in pan
Add 1/2 teaspoon cumin seeds, 2 chopped green chillies and fry
Add 1/2 teaspoon ginger garlic paste, copped spinach and fry
Cut off the stove and let it cool down
Add 2 boiled potatoes to a mixing bowl and mash them
Add fried spinach, coriander leaves, 1/2 teaspoon salt,
2 tablespoons bengal gram flour, 1/2 teaspoon turmeric powder and mix
If the mixture seems too loose in consistancy, add some more flour and mix
Spread oil or water on your hands
Roll them into round balls
They need to be deep fried now
Heat oil in pan
Fry the koftas one by one on low flame
Flip and fry till turn brown
Koftas are ready
Let's prepare gravy now
Heat 1 tablespoon oil in pan'
Add chopped onions and fry till they turn brown
Add diced green chillies, 1 teaspoon ginger garlic paste, 1/2 teaspoon turmeric powder and mix
Add tomato paste and cook till oil seeps out of it
Add cashewnut paste and mix
This step is optional
Cook for a minute
Add 1 teaspoon chilli powder, 1 teaspoon salt, 1 teaspoon coriander seeds powder,
1 teaspoon cumin seeds and mix
Add water and mix
Close lid and cook for 5 minutes
Add 1/2 teaspoon garam masala and mix
Add coriander leaves and mix
Add prepared koftas and mix
Cook on low flame for 5-10 minutes
Serve with rice or roti!
