INGREDIENTS
1. Green Mung Bean - 1 Cup
2. Rice - 1/4
3. Green Chillies - 4
4. Small Ginger Piece
5. Cumin Seeds - 1 Teaspoon
Wash green mung beans and rice. Add water and soak for 4-5 hours or soak overnight. Rice will make pesarattu crispy. Grind them in a mixie or grinder. Add chopped green chillies, chopped ginger and grind. Add 1 teaspoon salt. Move the grinded paste into a bowl and add water till it obtains dosa batter consistency. Add 1 teaspoon cumin seeds and mix. For sprinkling on the pesarattu; Chopped onions, chopped green chillies, coriander leaves, chopped ginger - these are optional could be used. Heat a pan. Pour the batter n hot pan and spread it with a spoon. Sprinkle chopped ingredients and press with a spoon. Add clarified butter (ghee). Oil or butter could also be added. After 3 minutes, when it turns brown flip the pesarattu. Add more oil if needed. Cook for 2 minutes and serve.
