INGREDIENTS
1. Soya chunks or meal maker - 1 cup
2. Basmati rice - 2 cups
3. Clarified butter(ghee) - 1 tablespoon
4. Oil - 1 tablespoon
5. Garam-masala - 5 cardamoms, 5 cloves, 2-3 small cinnamon sticks, 1/2 teaspoon shahjeera
6. Onions - 2
7. Salt - 1 teaspoon
8. Green chillies - 4
9. Carrot - 1
10. Potato - 1
11. Green peas - 1/2 cup
12. Mint leaves - 1/2 cup
13. Ginger-garlic paste - 1 teaspoon
14. Chilli powder - 1/2 teaspoon
15. Coriander seed powder - 1/2 teaspoon
16. Cumin seeds powder- 1/2 teaspoon
17. Garam-masala powder - 1/4 teaspoon
18. Turmeric powder - 1/4 teaspoon
19. Curd - 1/2 cup

Wash and soak 2 cups basmati rice in water. Boil water in a bowl. When the water starts to boil, cut off the stove and add 1 cup soya chunks or meal maker. Let it soak in hot water for 10 minutes. Remove the soya chunks from the water and press it with a spoon as shown. This will remove the excess water. Heat a pan and add 1 tablespoon clarified butter(ghee), 1 tablespoon oil. 2 tablespoons clarified butter(ghee) could also be added. Add whole garam-masala - 5 cardamoms, 5 cloves, 2-3 small cinnamon sticks, 1/2 teaspoon shahjeera and fry for a minute. Add 2 diced onions and fry. Add 1 teaspoon salt. Add 4 slices green chillies. Add diced carrots, diced potatoes, 1/2 cup green peas. These vegetables are optional. Mix them, close the lid and let it cook for 5 minutes. Add 1/2 cup mint leaves, 1 teaspoon ginger-garlic paste, 1/2 teaspoon chilli powder, 1/2 teaspoon coriander seed powder. Add the pre-soaked meal maker/ soya. Add 1/2 teaspoon cumin seeds, 1/4 teaspoon garam-masala powder, 1/4 teaspoon turmeric powder and mix. For 2 cups basmati rice, add 3 cups water. Add water and check the taste. Add salt if needed. Add 1/2 cup curd and mix. To the boiling water add the soaked basmati rice and mix. Close the lid and cook on medium flame. Cook till the water boils away. Add coriander leaves and mix.
