Ingredients

  • 1 1/2 cup Wheat Flour
  • 1 cup Grated Carrots
  • 1 cup Grated Jaggery
  • 1/2 cup Coconut Powder
  • 1/2 cup Groundnuts
  • 1 tsp Cardamom Powder
  • 1/2 tsp A pinch of Salt
  • 1/2 tsp Soda

Recipe Notes

CARROT SWEET ROLLS RECIPE

To make carrot sweet rolls, we need 1 1/2 cup wheat flour
All purpose flour could also be used
Add 1/2 teaspoon salt and a pinch of soda
Then add 1 tablespoon ghee
Oil also could be used instead
This will make the rolls crispy
Add water slowly and knead it
Let it sit for 15 minutes
Dough is ready to make the rolls, let's prepare stuffing now
Here I took 1 cup grated carrots along with 1 grated jaggery, 1/2 cup grated coconut and 1/2 cup ground nuts
More coconut powder could be used if desired
Fry the ground nuts till they give out a nice aroma and then grind them into a powder
Heat 1 1/2 tablespoon ghee in pan
Add the grated carrots and fry on low flame
Now add 1 cup grated jaggery and mix
Stir and fry till the jaggery melts
Let it simmer till it thickens
Add the grated coconut now and mix
Then add the ground nut powder and mix
Add cardamom powder and mix
Stuffing is also ready now
Let the stuffing cool down
Stuffing is also ready now
Knead the prepared dough again and take a small amount of dough from it
Roll it into a ball and press it into a thin puri sized roll
Put the stuffing inside and fold the puri on all sides and shown
On the last fold, spread a little water on it and press so it sticks
Prepare all the rolls in the same way
We need to deep fry them now
Heat oil for deep fry
Drop the rolls one by one and cook on low medium flame
Flip after a minute
Flip and fry till the turn golden brown
Serve hot!
