Vankaya Methi Curry Recipe in Telugu
How to Prepare Delicious Homemade Brinjal Methi Curry in Telugu
- 1/2 kg Brinjal
- 1 cup Fenugreek leaves
- 1 1/2 tbsp oil
- 2 Tomatoes
- 1 Onion
- 4-5 Green Chilies (paste, we need add some salt when we grind it)
- 1/2 Teaspoon Ginger and Garlic Paste
- 1/2 Teaspoon Turmeric Powder
- Salt ( as needed )
- 1 Teaspoon Cumin seeds
- Coriander leaves ( small amount )
Lets see how to cook Brinjal and Fenugreek leaves curry today. Fenugreek leaves adds flavor and taste to curries , we can add this to any curry we cook. So , as our recipe is Brinjal and Fenugreek leaves ,the combo tastes really good.
Method Of Preparation:
Here I have taken 1/2 kg Brinjal washed and cut into pieces
I have put the pieces in salt water , so that the pieces would not turn black or dark.
Now I have taken a cup of fenugreek leaves , washed and cut chopped into pieces.
Tomatoes cut into pieces , this is optional , we can add it if you wish to.
Take a pan ,put it on stove with 1 1/2 tablespoon of oil.
After the oil is hot will add 1/2 teaspoon of Cumin seeds and fry it for a minute.
Now will add the onion pieces and fry it till it gets transparent.
Add G1/2 teaspoon of Ginger and Garlic paste to it and stir it.
Then will add 1/2 teaspoon of Turmeric powder.
Now will add fenugreek leaves and mix them well.
Add green chilies paste and stir them thoroughly.
Now will add brinjal pieces, mix them properly and cook for sometime.
I am adding tomato pieces which is optional.
The purpose for adding tomato pieces is ti get some gravy.
Will cook it for 5 min till the tomato pieces get soft.
Generally brinjal cooks faster , like it will not take much time to cook.
We can water some water and cook for 5 to 6 minutes to get more gravy.
Now when the curry is ready garnish it with some coriander leaves.
So , our delicious Brinjal and Fenugreek leaves curry is ready , even you people try it.
