- 1 Onion
- 2 Green Chillies
- 10 Garlic Cloves
- 1 Teaspoon Cumin Seeds
- 2 Teaspoon Sesame Seeds
- 2 Teaspoon Coriander Seeds
- 2 Teaspoon Coconut Powder
- 1/2 Teaspoon Turmeric Powder
- 1 1/2 Teaspoon Salt
- 7-8 Dried Chillies
Cut brinjals into pieces and put them in water with 1 teaspoon salt. Garlic - chilli powder mixture have to be prepared first. Heat a pan, add 1 teaspoon cumin seeds, 2 teaspoons coriander seeds and fry. Fry for a minute and add 2 teaspoons sesame seeds. Fry till sesame seeds give a nice aroma. Add 2 teaspoons coconut powder and mix. Move these ingredients into a bowl. Fry 7-8 dried chillies. As dried chillies start to change colour, move them into a bowl. To a mixie jar add fried ingredients. Add garlic cloves, fried dried chillies and grind into a powder. Move the powder into a bowl. Garlic - chilli powder mixture is ready. Heat 2 tablespoons oil in a pan. Fry chopped onions. As onions start to change colour, add chopped green chillies and fry for a minute. Add 1/2 teaspoon turmeric powder and mix. Add brinjal pieces and mix. Fry on low flame for 10 minutes. Don't cook till brinjal pieces become too soft. Add 1 1/2 teaspoon salt or salt to taste. Add garlic - chilli powder mixture and mix. Don't mix too much or the brinjal pieces will be squished. Toss the pan to mix. Cook on low flame for 10 minutes.
