We usually eat the red part of the watermelon and throw away the white part. Even the white part has many nutrients. To prepare halva; Remove the skin/ green part of the watermelon. Grate it. To a pan, add 1 tablespoon clarified butter (ghee). Fry dry fruits first. Any dry fruits could be used. Here I used raisins and cashews. Move it into a different bowl when cashews turns brown. To the same pan, add 1 tablespoon clarified butter (ghee). Fry grated watermelon in it. Fry on low flame for 10-15 minutes. Fry till the raw smell in the watermelon goes away. For 1 cup grated watermelon, add 1/2 cup sugar and mix. Fry till sugar melts. Add 2 tablespoons milk powder and mix. Milk powder is optional. Cova or condensed milk instead of milk powder could be used. If you add condensed milk, add less sugar. Mix for sometime on low flame. Add 1/2 teaspoon cardamom powder for a nice smell. Add food colour for colour if you wish. Add fried dry fruits and mix. Cut off the stove. Serve hot or cold.
