To a mixing bowl, add 1 1/2 cup wheat flour, 1/2 teaspoon ajowan, 1/2 teaspoon salt, 1 1/2 teaspoon oil and mix
Add water and knead it 5-6 minutes into soft dough
Let it sit for 10 minutes. In the mean time, lets prepare the stuffing
Here I have boiled, peeled and mashed 3 potatoes
Add 3-4 tablespoons rice flour. Corn flower also could be used instead
Add chopped capsicum, onions (optional), 2 chopped green chillies, 1/2 cup chopped coriander leaves, 1 teaspoon salt, 1/2 teaspoon coriander seeds powder, 1/4 teaspoon turmeric powder, 1/2 teaspoon chant masala and mix
Mix it with hhand
Add tamarind juice and mix
Now, take a little stuffing and roll it into cylindrical balls
Knead the dough again
Taka a small amount of dough and roll it onto a ball
Press it flatly and roll it into a puri again
Make cuts as shown and place the prepared stuffing ball
Close off the stuffing as shown in the video and out aside
Heat oil for deep fry
Fry the potato toffees one by one and cook on low medium flame
Flip and cook till they turn golden brown
Serve hot!
