Ingredients

  • 2 tbsp Sugar
  • 1 1/2 tbsp Dry Yeast
  • 1 Cup Milk
  • 2 Cup Maida / White Flour
  • Salt needed
  • Oil needed
  • 1 tbsp Ginger finely chopped
  • 1 tbsp Garlic finely chopped
  • 1 tbsp Onion finely chopped
  • 1 tbsp Capsicum small amount finely chopped
  • 1 tbsp Carrot small amount finely chopped
  • 2-3 pcs Green Chilies finely chopped
  • 1/2 tbsp Chili sauce
  • 1 tbsp Tomato Ketchup
  • 1 tbsp Soya Sauce
  • 1/4 cup Coriander Leaves finely chopped
  • 1 tbsp Sesame small amount
  • 2 tbsp Butter small amount
  • Cheese as needed

Recipe Notes

Take a bowl add 2 tablespoons of sugar and 11/2 teaspoons of dry yeast.
will add some Luke warm milk , mix them and keep it aside to activate for 10 to 15 minutes.Then will take a mixing bowl add 2 cups of maida flour , add 1 teaspoon of salt.Now will add the yeast mixture and mix them properly .Will knead the dough using the milk , if milk is not sufficient will add Luke warm water. The dough should be fine and soft , it should be softer than we knead it for rotis. Now will apply some oil to the dough. Take another bowl grease it with oil and place the dough.
Cover it with a tight lid or a cling wrap , place it aside for 1 hour.
Will prepare stuffing now for the buns.
Heat a pan add 1 tablespoon of oil add 1 teaspoon of chopped garlic.
Then will add 1 teaspoon of finely chopped ginger and cook it for a minute.
Now will add 1 chopped onion , Capsicum and Carrot.
Add 1/2 cup of peas too , we can add any veggie of our choice.
Then will add 3 to 4 finely chopped green chilies place a lid and cook until the veggies are soft.
Add salt as needed 1/2 teaspoon of chili sauce or chili powder if you wish to.
Now will add 1 teaspoon of Tomato ketchup and soya sauce each.
If you wish to you can also add some lime too .
Now before we put off the stove add 1/4 coriander leaves , and place it aside.
Then will take the fermented dough mix it again.
Take the idly mold grease it with oil .
Make small and equal portions of the dough .
Take a portion, press it with hands into a small poori sized spread.
Stuff it with the curry we cooked and add cheese as needed.
Cover the stuffing with the dough , roll it into a fine ball and place it on the idly mold.
Now will cover the bun balls on the idly mold with a kitchen cloth for 15 to 20 minutes.
Then will take a thick based vessel place a stand in it with idly mold on the stand.
Will milk wash the buns once , you can egg wash it too .
Top the Idly balls with some sesame , place a lid .
Now will cook/bake it for 30 to 35 minutes on medium flame.
Will just check if the buns are cooked and changed the color.
If they are done brush it with some butter put off the stove.
Will again cover the buns with a wet kitchen cloth , so that they remain soft when we eat for 5 minutes. So our spongy soft Veggie buns are ready. Now are enjoyable spongy snack is ready , kid would thoroughly relish it and love to eat it again and again..
