Vegetable Pasta

Pasta is favorite to kids and grown-ups as well, so here is a simple recipe for it with healthy Veggies.

A delightful recipe with minimal ingredients and time as well.Can be packed for lunch or served as evening snack after school to kids. And the best for weekend breakfast and a quick dinner for the family.

Ingredients

  • 2 Cups Pasta
  • 1/2 Cup Capsicum Chopped
  • 1/2 Cup Tomato Chopped
  • 1/2 Cup Carrot Chopped
  • 1/2 Cup Onions Chopped
  • 1/2 Cup Potatoes Chopped
  • 1/2 Cup Green Peas Boiled
  • 4 to 5 Numbers Green Chiles Slit
  • 1 Tablespoon Garlic Finely Chopped
  • Water as required
  • 1 3/4 Tablespoon Oil
  • 1 1/2 Teaspoon Salt or as needed
  • 2 Teaspoons Soya Sauce
  • 1 Teaspoon Vinegar
  • 1 Teaspoon Red Chili Sauce
  • 1 Teaspoon Tomato Sauce
  • 1/2 Teaspoon Pepper Powder
  • Coriander Leaves for garnishing

Instructions

  1. Boil 2 cups of Pasta in a pan, fill it with water till half. I am boiling it in an electric cooker.

  2. Any pan can be used for boiling the pasta.

  3.  Add ½ teaspoon of Salt and a teaspoon of oil to it and let it boil. To the boiling water add pasta and cook.

  4.  In meantime will prepare for the Veggies, to add them to Pasta.

  5. In a pan add 1 ½ Tablespoon Oil, I am using Olive Oil here. Heat the pan.

  6.   Now add ½ cup diced Onions and 1 tablespoon of finely chopped garlic.

  7. Then add ½ cup of diced Carrot, Potatoes, GreenChiles, and Tomatoes each.

  8.  Stir fry them, mix well and cook till Tomatoes are soft with a lid.

  9.  Add ½ cup of Boiled Green Peas and fry them well.

  10. Now we can see the pasta is cooked well, drain it and place it aside for a while.

  11. Then add 2 teaspoons of Soya Sauce and 1 a teaspoon of Vinegar.

  12.  And add 1 teaspoon of Red Chili Sauce and 1 A teaspoon of Tomato Sauce.

  13.  Now to this add 1 teaspoon of salt or as needed and ½ teaspoon of Pepper Powder.

  14.  Mix them thoroughly.

  15.  Now add the boiled pasta and toss them well.

  16.  Stir cook them for 2 Minutes garnish it with some Coriander Leaves.

  17.    Tasty and Yummy Pasta at home is ready.
