Vanilla Cupcake

Recipe Notes

Ingredients:

01 All-purpose flour – 1 cup

02 Sugar - ¾ cup

03 Eggs – 3

04 Oil – ½ cup

05 Milk – ½ cup

06 Vanilla essence – 1 Teaspoon

07 Baking powder - 1 Teaspoon

08 Sodium bicarbonate – ½ Teaspoon

09 Salt – ¼ Teaspoon

In a pressure cooker put 1 cup salt. Sand also can be used. Spread it evenly on the base. Pre heat the cooker for 10 minutes on medium flame. In the meantime we will make batter. In a bowl add 1 cup all-purpose flour, 1 tea spoon baking powder, 1/2 tea spoon sodium bicarbonate and mix well. In a different bowl beat the 3 eggs using a whisker or egg beater. Add ½ cup oil mix well. Add ¾ cup powdered sugar and mix well. Add a pinch of salt. Add 1 tea spoon vanilla essence. In this mixture slowly add the previously prepared flour powder and stir continuously so no lumps are formed. Add 1/2 cup milk, Mix until required consistency is obtained. Cake batter is ready. For cupcake we can use cupcake moulds or any other bowls. To the cups add oil and spread it evenly on the inside so that cake doesn’t stick. Also add some all-purpose flour and do as shown in the video so it spreads evenly. Remove the excess flour. Add the cake batter in to the cups and ensure it’s lesser than half cup size as it will not overflow while cooking. On the pre heated salt put a plate and place the cups of cake batter on top of it. Now close the lid of the pressure cooker. Don’t put a whistle. First cook on high flame for 3 minutes and then cook for 15 to 20 minutes on low flame. Check if the cake is completely cooked by inserting a toothpick in to it. Let the cake cool down. Remove the cake from the pan by doing as shown in the video. Garnish with your choice of toppings.
