Chicken Soup

Home-Made Chicken Soup, refreshing and relieving from Cold, and Cough, good for health and helps to keep warm in winters. Flavored with Indian Spices, many ways are there to make the soup. But this is a simple and a quick one with some veggies in it. A flavorful and Delicious one to try and relish.

Ingredients

  • 1/4 Kg Chicken with bones
  • 1 No Onion chopped
  • 1 Teaspoon Cumin Seeds
  • 2 Teaspoons Coriander Seeds
  • 1/2 Teaspoon Pepper Corns
  • 2 to 3 Pieces Cinnamon
  • 5 to 6 Cloves Garlic Cloves
  • 1 Piece Ginger a big one
  • 2 No's Carrots diced
  • 1 No Potato a big one
  • 2 No's Green Chilies Slit
  • 1/2 Litre Water
  • 1 Teaspoon Salt or as needed
  • 1 1/2 Tablespoon Ghee
  • 3 No's Cardamom
  • 3 No's Cloves
  • 3 No's Cinnamon pieces
  • 1 No Star Anise
  • 2 to 3 No's Bay Leaves
  • 1/2 Cup Mint Leaves
  • 1/2 Cup Coriander Leaves
  • 2 Teaspoons Corn Flour

Instructions

  1. Clean and wash ¼ Kg Chicken with bones and place aside for a while.

  2. To a mixie jar add 1 chopped Onion, ½ TeaspoonJeera, 2 Teaspoons Coriander Seeds.

  3. Then, add ¼ Teaspoon Pepper Corns, 2 to 3 Cinnamon Pieces, 4 to 5 Garlic Cloves, 1 Piece of Ginger and blend them into a fine paste

  4. Now, to a cooker add washed Chicken and the ground masala paste.

  5. Then, add 2 Carrots chopped, 1 big Potatosliced, 2 Green Chilies Chopped.

  6. Add ½ a Litre of Water to it, along with 1Teaspoon of Salt or as needed mix them all.

  7. Pressure cook it for 4 to 5 whistles.

  8. Let it release the pressure and open the lid.

  9. In a pan heat 1 ½ Tablespoon of Ghee and add ½Teaspoon Cumin Seeds.

  10. Add 4 to 5 Pepper Corns, 3 Cardamoms, 3 Cloves,1 Cinnamon Piece.

  11. Then, add 1 Star Anise, 2 to 3 Bay Leaves fry them all for a while.

  12. Now, add the Chicken soup to it, let it boil for some time.

  13. Add ½ Cup of Mint Leaves and Coriander Leaves each.

  14. In a bowl mix 2 Teaspoons of Corn Flour and add it to the boiling soup.

  15. Let it boil for 2 to 3 more minutes, it helps to thicken the soup.

  16. Depending on the thickness we wish to have, a cornflour mixture should be added.

  17. Can taste it once and add salt or pepper powder if required.

  18. Put off the flame, tasty delicious and healthy soup is ready.
