CORN DOSA - INGREDIENTS
1. Corn - 2 Cups
2. Green Chillies - 5-6
3. Cumin Seeds - 1/2 Teaspoon
4. Salt - 1 Teaspoon
5. Coriander Leaves - 1/2 Cup

To a mixie jar, add 2 cups corn. It is not necessary to boil corn. Here, I used normal corn, but sweet corn also could be used. Add 1/2 teaspoon cumin seeds, 1 teaspoon salt or salt to taste, 5-6 green chillies and grind it into a paste by adding water. Move this paste into a mixing bowl. This dosa batter could be made without adding chillies also. Add water so the dosa consistency is obtained. Mix and taste the batter, add salt if necessary. Add coriander leaves and mix. Coriander leaves could be added to the mixie jar and grinded into a paste along with other ingredients also. Mix. Heat a pan. If you aren't using a non-stick pan, spray some oil before pouring the batter on the pan or else it is not necessary. Pour 2 spoons of batter on the pan. Spread it on the pan. The thinner the batter is poured, the crispier dosa will be. Grease with oil or ghee. Flip after 5 minutes after it turns golden brown. Cook for another 5 minutes on low flame. The longer you leave it on low flame, the crispier it will become.

SWEET PALAMBARAM - INGREDIENTS
1. Rice Flour - 1/2 Cup
2. Sugar - 1/2 Cup
3. Milk - 2 Cups
4. Cardamom Powder - 1/2 Teaspoon

Boil 2 glasses (500 ml) water in a pan. Close the lid so it boils faster. To a bowl, add 1/2 cup rice flour, 1 1/2 cup cold water and mix. Mix so that no lumps are formed. Add this mixture slowly to the boiling water. Boil on low flame. Add 1/2 cup sugar and cook for another 5 minutes. Add 1/2 teaspoon cardamom powder for flavour and mix. Coconut powder could also be added.
