  • Cumin Seeds
  • Lemon Juice
  • Turmeric Powder

PRAWNS DUM BIRYANI

Here I took 1/2 kg prawns for the biryani along with 2 cup basmathi rice
Wash and soak the rice for 30 minutes
Chop 4-5 onions and fry them till they turn brown
Let’s prepare masala first for the biryani
To a mixie jar, add 2 tablespoons coriander seeds, 1 teaspoon cumin seeds, whole garam masala – 1/2 teaspoon pepper, 2 star anise pieces, 3 cardamoms, 4 cloves, 3-4 small cinnamon stick pieces and powder them
Masala Powder is ready now
Now, to cleaned prawns, add 1/2 teaspoon turmeric powder, 2 teaspoons salt, 2 teaspoons chilli powder, prepared masala powder, some of the brown onions, 2 teaspoons ginger garlic paste, mint leaves, coriander leaves, 1 tablespoon lemon juice, 1/2 cup curd and mix
Also add 2 green chilies and mix
Let it sit for 1/2 hour atleast
We need to boil the rice first
Fill a bowl with more than half with water and boil it
Add whole garam masala to this water – 1 bay leaf, 1/2 teaspoon shahjeera, 2-3 cinnamon stick pieces, 4 cloves, 3 cardamoms, 1/2 teaspoon salt, 1 teaspoon clarified butter (ghee), and boil it
As the water starts to boil, add the soaked basmathi rice and cook till it is 70% cooked
In the mean time, let’s prepare the bowl to make dum
Take a bowl with thick base. This will lower the chances of the biryani getting burnt
Spread some oil on the base and spread it
Now, add the prepared prawns to the base
Pour 1/2 cup water to the bowl in which the prawns are marinated in and add this water to the prawns
Then add mint leaves, coriander leaves and some brown onions
We can see that the rice is a bit cooked now
Drain off the water from the rice and add the rice over the prepared dum
Then add the rest of the brown onions, mint leaves and coriander leaves
Spread 2 tablespoons clarified butter (ghee) over the rice
Place this pan over the stove and cover any holes with some dough so that the vapour doesn’t come out
Cook on high flame for 10 minutes and then place a pan below the bowl
This pan is to prevent direct flame hitting the pan and burning the prawns in the bowl
Cook for another 5 minutes on high flame and then on low flame for 5 minutes
Cut off the stove and don’t open the lid for 15-20 minutes atleast
Tasty Prawns Dum Biryani is ready to serve!
