Who knew that sprinkling eggplant/brinjal with seasoning and frying them would create delicious and healthy brinjal chips or eggplant chips? Follow this simple recipe by Hyderabadi Ruchulu to make this crispy treat at home!
- 2 Brinjals
- 1 tsp Chilli Powder
- 1 tsp Salt
- 2 tbsp Bombay Rava
- 2 tbsp Rice Flour
- 2 tbsp Corn Flour
- 2 tbsp Sesame Seeds
Wash the brinjals and cut off the ends.
Slice them into 1/2 inch pieces
To the brinjal slices, add salt and toss them.
Put the pieces in a strainer and let it sit for 10-15 minutes
To a bowl, add 2 tablespoons rice flour, 2 tablespoons bombay rava,
1 teaspoon chilli powder, 1/2 teaspoon salt and mix
Add 2 tablespoons sesame seeds and mix
To a different bowl, add corn flour with some water and mix it into a paste.
Tossing the brinjal pieces with the salt will remove the excess water
Move the brinjals into a plate
Dip them in prepared corn flour mixture
coat them with prepared rice flour mixture
We need to shallow fry them now
Heat oil in pan
Fry the brinjal pieces one by one on low-medium flame.
Fry till they turn golden brown and crispy.
Serve as a side dish or a snack!
