Gongura Mutton by Hyderabadi Ruchulu, is a popular Telugu people cuisine a deliciously finger licking recipe to treat your family and friends.

 

Ingredients

1/2 kg mutton

2 bunches Sorrel Leaves Paste

4 onions

Whole Garam Masala

1/2 tsp Turmeric Powder

1 1/2 tsp Ginger Garlic Paste

2 Ginger Garlic Paste

3 tsp Chilli Powder

2 1/2 tsp Salt

1 tsp Coriander Seeds Powder

1/2 tsp Cumin Seeds Powder

1/4 tsp Garam Masala Powder

Let’s see how to make gongura mutton easily

 

Here I took 1/2 kg mutton

To a pressure cooker, add washed mutton

Then Add half of the 4 chopped onions to the mutton along with whole garam masala – 1/2 teaspoon shahjeera, 4 cloves, 2-3 small cinnamon stick pieces, 2 bay leaves and 2 cloves

Add 1/4 teaspoon turmeric powder, 1/2 teaspoon ginger garlic paste and mix

There is no need to add water here since the mutton already has water content in it

Close lid and cook for 3-4 whistles

Let’s prepare sorrel leaves paste now

Usually we boil the sorrel leaves, grind it into a paste and then add it to the mutton

But, here I’m using instant sorrel leaves paste

This paste could be used to make gongura rice, sorrel leaves mutton, chicken and other sorrel leaves recipes instantly

If this paste is not readily available, just boil the sorrel leaves in the time the mutton cooks and grind it into a paste

Cook the mutton for 3 whistles and open the lid after cooker cools down

We can see that there is lot of water seeping out of the mutton

Don’t throw the water away

Heat a pan

Add the rest of the onions and fry

Close lid and fry till they change colour

Add 2 green chillies along with 1/4 teaspoon turmeric powder, 1 teaspoon ginger garlic paste and fry

Add instant sorrel leaves paste and mix

Here I added 2 tablespoons instant sorrel leaves paste

Then Add the boiled mutton along with the water and mix

Subsequently Add 3 teaspoon chilli powder, 2 1/2 teaspoons salt ot salt to taste, 1 teaspoon

coriander seeds powder, 1/2 teaspoon cumin seeds powder and mix

Mix and add 1/2 cup water

Then Cook for 10 minutes on low medium flame

Stir and cook till the gravy thickens

Add 1/4 teaspoon garama masala and mix

Then Sprinkle coriander leaves and cut off the stove

Serve hot with roti or rice
