Recipe Notes

Mamidikaya Rasam

Let's see how to make Green Mamidikaya Rasam

Green Mamidikaya Rasam is made with green mango
Since it is summer season, green mango rasam is very healthy for us
This is a sweet and sour rasam
Here I took 1 big green mango
You can take more than 1 mango if more quantity is being made
Peel and chop the mango
Move the mango into a bowl along with the seed and add 1 glass water
Boil for 8-10 minutes
Add more water and squeeze the pulp of the mango
Squeeze the seeds also and throw it away
Mango juice is ready
Let's prepare tempering now
Heat 1 tablespoon oil in pan
Add 1/2 teaspoon mustard seeds, 1/2 teaspoon cumin seeds, pieces of 2 dried chillies and fry
As dired chillies start to change colour, add 1 diced onion
Add 3-4 green chillies and fry for a couple of minutes
Add 1/2 cup curry leaves, 1/2 teaspoon turmeric powder, 1/2 teaspoon ginger garllic paste and mix
Fry for a minute and add the prepared mango juice along with water as desired
Add 1 1/2 teaspoon salt or salt to taste and 1 teaspoon chilli powder
Less chilli powder could be used if more green chillies are used and vice versa
Add 1 teaspoon coriander seeds powder, 1/4 teaspoon cumin-fenugreek seeds powder, 2 teaspoon sesame seeds powder and 2 teaspoons jaggery
Jaggery is one of the main ingredients to the recipe
It's sweetness along with the green mango's sourness is what gives life to the rasam
Sugar also could be used instead of jaggery
Simmer for 20-25 minutes and sprinkle coriander leaves
Serve hot with rice!
