Gutti Vankaya Fry
Stuffed Brinjal Fry is popularly known as Guthi Vanakaya Fry, and is stuffed with peanuts, sesame or Bengal gram dal. With added spices to it. Tastes awesome with plain rice, curd rice, or even with roti.
Give it a try to this different delicacy,a simple and a quick one to prepare.
- 1/4 Kg Brinjals/ Egg Plant
- 2 Tablespoon Coriander Seeds
- 1 Teaspoon Cumin Seeds
- 10 to 12 No's Red Chilies
- 10 to 12 No's Garlic Pods
- 1/2 Cup Roasted Bengal Gram
- 1 Teaspoon Salt
- 1 No Onion finely chopped
- 1 Teaspoon Ginger Garlic Paste
- 1/2 bunch Coriander Leaves finely chopped

Start with our stuffing part. Will dry roast 2 tablespoons of Coriander Seeds for a moment.

Add 1 teaspoon of Cumin seeds to it.

Then, will add 10 to 12 red chilies and roast for a while

In Meantime in a mixie jar add 10 to 12 Garlic pods and ½ cup of Roasted Bengal Gram.

And then add all the 3 dry roasted coriander seeds, cumin seeds and red chilies and grind them all into a fine powder.

Now will take fresh and tender Brinjals cut diagonally on both sides to fill in the stuffing.

Then will stuff in the powder filling and keep them aside.

Heat 3 Tablespoons of oil in a pan and place the stuffed Brinjals one after the other and fry them on low flame.

Turn them on the other side and fry them with a lid for a while, so that they cook fast.

After the Brinjals are fried place them in a plate.

In the same pan add 1 finely chopped onion and fry till it changes colour.

And 1 teaspoon of ginger garlic paste and fry for a while.

Add some coriander leaves stir them all and add fried Brinjals to it.

Place a lid and cook for some time.

Then add the powdered mixture as required to it.

Put off the stove, our yummy, tasty Stuffed Brinjal fry is ready.

Can be served with Rice and Roti as well.
