Hyderabadi Ruchulu's 15 minutes Instant Sambar mix recipe is the way to go to satisfy any last minute cravings. Pre-prepare this instant sambar mix at home to keep in handy for when there are unexpected guests. This instant sambar is not only quick to make but also very tasty that is sure to keep your tummy satisfied!
- 1 cup Toor Dal
- 1/4 cup Bengal Gram
- 2 tbsp Tamarind
- 2 tbsp Coriander Seeds
- 10-12 Dried Chillies
- 1/2 cup Curry Leaves
- 1 tsp Cumin Seeds
- 1/2 tsp Fenugreek Seeds
- 1/4 tsp Pepper
- 3 Cloves
- 2 Cardamom
- 3 small pieces Cinnamon Sticks
- 1 tsp Turmeric Powder
- 1 1/2 tsp Salt
- 3 Dried Chillies
- 1/2 tsp Mustard Seeds
- 1/2 tsp Cumin Seeds
To make instant sambar mix, we need to dryly fry all the ingredients first.
Let's fry toor dal first
Fry toor dal on low flame only so that it doesn’t burn or the taste will change
Fry till it changes colour and cut off the stove
Move it into a plate
Let's fry bengal gram next
Fry till it changes colour and cut off the stove
Move it into the same plate
Fry coriander seeds till they give a nice aroma
Move it into the same plate
Fry cumin seeds and fenugreek seeds
Add pepper and mix
Don't fry pepper for too long. Fry till they heat up
Add cinnamon sticks, cloves, cardamom and stir
Move it into the same plate
Fry 10-12 dried chillies. The quantity of dried chillies depends on your taste.
We could add chilli powder later also if desired
Move dried chillies into the plate after they start to change colour
Fry curry leaves. These are washed and dried curry leaves.
Fry till the curry leaves lose all the moisture in it.
Fry till it turns crispy
Move it into the same plate
Let's heat up tamarind also since we shouldn't wash it
Cut off the stove and move it into the same plate
Let all the ingredients cool down
Add them to a mixie jar.
Also add tamarind, 1 teaspoon salt or salt to taste 1 teaspoon turmeric powder
Grind them into a soft powder.
Move it into a bowl
We need to add tempering next
Heat 3 teaspoons oil in pan
Add 1/2 teaspoon mustard seeds and fry
Add 1/2 teaspoon cumin seeds and fry
Add dried chillies and fry
Add this tempering to prepared power and mix
Store it in an air tight container.
This could be used for up to 1 month.
If stored in fridge it could be stored for up to 2-3 months

Any vegetables could be used for cooking this sambar
Tomatoes, carrots, onions, drumsticks, bottle guard pieces are being used here.
To a pan, add all the chopped vegetables, 1 cup water, close lid
Heat for 5 minutes.
If in a cooker, cook for 1-2 whistles
Add as much water as desired
Add 3 tablespoons of instant sambar mix powder to a different bowl
Add a little water and mix
Add this mixture to boiled vegetables and mix
Stir in between and simmer for 10 minutes
Other ingredients like curry leaves, salt and chilli powder could be added
Jaggery or sugar could also be added
Since we already added tempering, we don't need to make it again
After the sambar simmers for 10-15 minutes, add coriander leaves
Cut off the stove
Serve with idly, dosa or rice
