Kakarakaya Pulusu in Telugu | How to Cook Bitter Gourd Recipe in Telugu
1. Bitter gourd – 1/4 Kg
2. Onions – 1 Cup
3. Tamarind – 30 Grams
4. Curry Leaves – 1/2 Cup
5. Green Chillies – 2
6. Chilli Powder – 2 Teaspoons
7. Salt
8. Turmeric Powder – 1/2 Teaspoon
9. Cumin Seeds – 1/2 Teaspoon
10. Ginger Garlic Paste – 1 Teaspoon
11. Sesame Seeds Powder – 2 Teaspoons
12. Coriander Seeds Powder – 1 Teaspoon
13. Sugar – 1 Teaspoon
Wash and clean bitter gourds. They don’t need to be peeled.
Cut off the ends and cut into circles.
Mix 1 teaspoon salt, 1/4 teaspoon turmeric powder.
Close the lid and let it sit for 15-20 minutes. Soak tamarind and juice it.
After 20 minutes, press the pieces. This will remove the bitter juice.
It is not compulsory to follow this process.
Heat 2 tablespoons oil in a pan. Add 1/2 teaspoon cumin seeds, 1
cup onions and fry. Fry till onions turn brown. Add 1/2 teaspoon turmeric powder,
1 teaspoon ginger garlic paste and mix.
Fry for a minute and add bitter gourd pieces.
Mix, close the lid and cook on low flame. Add green chillies, curry leaves and mix.
Cook for 5 minutes and add 2 teaspoons chilli powder, 1 teaspoon salt,
1 teaspoon coriander seeds powder, 2 teaspoons sesame seeds powder and mix. Mix.
Juice tamarind and add water to curry. Add 1 teaspoon sugar.
Cook till required consistency is obtained. Add coriander leaves and mix. Garam masala powder could also be added.
