Stuffed Kakarakaya Curry is a delicious recipe which is a mixture of spice and bitterness made with fresh bitter gourd and stuffed with masala made with roasted channa dal, chilli powder and garlic.
- 1/4 kg Bitter Gourd
- 3 tbsp Roasted Bengal Gram
- 2 tsp Coriander Seeds
- 1 tsp Cumin Seeds
- 2 tsp Salt
- 1/2 Dried Coconut
- 10-12 Garlic Cloves
- 10 Dried Chillies
Peel and wash the bitter gourds.
Cut the bitter gourds in half if they are too big
Put a vertical cut in the middle and remove the seeds if they desired
Spread the salt in the cuts
Heat 3 tablespoons oil in pan
Fry bitter gourds till they become brown and move them into a plate
Let's prepare stuffing now
Heat 1/2 teaspoon oil in pan
Add 1 teaspoon cumin seeds, 2 teaspoons coriander seeds and fry
Add dried chillies and fry till it changes colour
Add pieces of dried coconut or coconut powder and stir
After a minute, add 3 tablespoons roasted bengal gram
Add garlic cloves and cut off the stove
Let the mixture cool down and powder the mixture
Stuff this powder to the fried bitter gourds
In the oil leftover after frying the bitter gourds, add the stuffed bitter gourds
Flip and fry carefully for 8-10 minutes till they turn brown
Serve with rice or roti
