Evening Time Snacks Recipes Vankaya Bajji
- 3-4 Brinjals
- 1 Cup Besan Flour
- 2 Tablesppons Rice Flour
- 1/2 Teaspoon Turmeric Powder
- 1 Teaspoon Chilli Powder
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Coriander Seeds Powder
- 1/4 Teaspoon Cumin Seeds Powder
- 1/2 Teaspoon Ajowan
- A Pinch Baking Soda
- For Deep Fry Oil
Cut brinjals into circles and put them in water mixed with salt.
To a bowl, add 1 cup besan flour, 2 tablespoons rice flour. Rice flour gives crispness. Add 1 teaspoon chilli powder, 1/2 teaspoon salt, 1/2 teaspoon coriander seeds powder, 1/4 teaspoon cumin seeds powder, 1/2 teaspoon turmeric powder, 1/2 teaspoon ajowan. Ajowan could be used as it os or grind 1/2 teaspoon ajowan coarsely and add it to the mixture. Mix these dry ingredients dryly. Add a pinch of baking soda. By slowly adding water, stir the mixture into a batter without lumps. Let the batter sit for 10 minutes. Heat oil for deep fry in a pan. Dip brinjal pieces in prepared batter and fry in hot oil one by one. Fry on medium flame. Flip after one side becomes light brown. Fry till they become golden brown in colour.
