- 3 pcs Brinjals
- 3 pcs Tomatoes
- 1 pcs Onions
- 2 pcs Green Chillies
- 1 1/2 tsp Chilli Powder
- 1 tsp Salt
- 1/2 tsp Cumin Seeds
- 1/2 tsp Turmeric Powder
- 1 tsp Ginger Garlic Paste
- 1/2 tsp Coriander Seeds Powder
- 1 tsp Cumin Seeds Powder
VANKAYA ALOO CURRY
Let’s see how to make potato brinjal curry
Dice all the vegetables
Heat 1 tablespoon oil in pan
Add 1/2 teaspoon cumin seeds and fry
Add onions and fry till they turn transparent
Close lid and fry
Add green chillies and fry
Add 1/2 teaspoon turmeric powder, 1 teaspoon ginger garlic paste and fry for a minute
Add diced potatoes and fry for 2-3 minutes on low flame
Add tomato pieces and cook till they become soft
Add brinjal pieces and for for 3-4 minutes.
Add 1 1/2 teaspoon chilli powder, 1 teaspoon salt or salt to taste, 1/2 teaspoon cumin seeds powder, 1 teaspoon coriander seeds powder and mix
Add 1/2 cup water and mix
Close lid and cook till the gravy thickens
Sprinkle coriander leaves and mix
Serve hot with rice or roti!
